2 large ripe avocados
150g high quality dark chocolate
1 tbsp Everyday blend matcha
2 tsp vanilla paste
3 tbsp maple syrup
1 x 160g coconut milk
1.Place a heatproof bowl over the top of a pan of simmering water, make sure it isn’t submerged and melt the chocolate. Once melted set aside to cool slightly.
2. In the meantime halve and stone the avocados, remove the flesh adding this into a food processor along with the remaining ingredients. Pulse the mixture until it reaches a creamy consistency.
3. Remove 1/3 of the mixture, a put to one side this will be used to create the green matcha layer.
4. To the remaining 2/3 slowly pour in your melted chocolate and pulse a final time until properly mixed through.
5. Divide your mixture across 4 small pots, creating layers of the chocolate and matcha mixture. Put them into the fridge to chill and set for about 30 minutes.
n.b Matcha and avocado oxidise so these are best eaten on the day.
